Parmigiana Alla Melanzane! It’s like a song to my ears 😂 Everytime I went to an Italian restaurant, it was the first thing I’d order, until I started making it 🤗
What’s your favorite Italian dish?
Ingredients for 2 large trays:
◇ 3 large eggplants.
◇ 7 tomatoes.
◇ 1 small onion.
◇ 1 small can of strained tomato.
◇ 1/4 cup of olive oil.
◇ 1 tsp of sugar.
◇ 2 tsps of salt.
◇ Sprinkle of pepper.
◇ Canole oil.
◇ Grated parmesan cheese.
◇ Mozarella cheese slices.
◇ Emmental cheese.
◇ Peel and cut the eggplants into 1 cm thick round pieces. Place them in a cooking tray and spread canole oil over each slice on both sides. Place them in the oven for about 40 mins at 180°C all the while flipping them at approximetaly 20 mins of the cooking time. They should be gold and tender on each side.
◇ In a sauce pan, fry the sliced onions with the olive oil until tender and gold. After cutting and mixing the tomatoes in a food processor, add it to the fried onion. Let boil for 5 minutes.
◇ Add the sugar, salt, pepper and strained tomato. Leave to boil for 5 minutes all the while mixing.
◇ In a cooking tray add the soft eggplants then cover them with the red sauce and two kinds of cheese (preferably mozarella and emmental).
◇ Repeat once again and this time cover with the 3rd cheese (parmesan).
◇ Place in the oven for about 10 minutes. Or until the cheese melts, then turn on the top of the oven for about 7 minutes until the top cheese melts and becomes golden.
You can always bake the 2 trays, eat one instantly and place the other in the freezer for next time.
