Tomatoes and Eggs “Faraket bed w banadoura”

I keep receiving messages to keep on posting easy recipes. So today, I thought about preparing one of the easiest recipes I know: Tomatoes and Eggs aka “Faraket Bed w Banadoura” And let me tell you, it was so delicious 😍

Ingredients (for 3 persons):
β—‡ 6 tomatoes.
β—‡ 8 eggs.
β—‡ 1 full head of garlic.
β—‡ 1/4 cup of olive oil.
β—‡ 1 tsp salt.
β—‡ Sprinkle of pepper.

Method:
β—‡ Peel and cut the garlic into small squares pieces (or just put it in a food processor to save time). Also cut the tomatoes into small square pieces (or put them in a food processor).
β—‡ Fry the garlic with the olive oil until golden. Add the tomatoes and keep on high heat until the tomatoes’ sauce dries. Stir from time to time. (Once the tomatoes are done you can leave them aside until ready to eat).
β—‡ When you are ready to eat, turn the heat on and put the eggs above the tomatoes and sprinkle the salt and pepper over them. Mix it well until the eggs are well done.

There you have it πŸ‘©β€πŸ³ NB: better served with a pita bread or toast.
