Yummy and easy pumpkin soup

Nothing screams autumn like a pumpkin soup ๐Ÿ‘†

I finally found a recipe that I actually like and it’s super easy ๐Ÿ˜Š. Here it is๐Ÿ‘‡

โ—‡ 1.2 kg of fresh pumpkin cut into squares, or you can get frozen pumpkins.
โ—‡ 1 medium sliced onion.
โ—‡ 2 whole peeled garlic cloves.
โ—‡ 3 cups of chicken broth.
โ—‡ 1 cup of water.
โ—‡ 1 tsp of salt.
โ—‡ 1/2 tsp of pepper.
โ—‡ 3/4 cup of cooking cream.

โ—‡ Place all the ingredients (except the cooking cream) in a sauce pan and leave to boil on high heat, uncovered. After boiling, leave for 5 mins and then lower heat and leave for 10 mins to simmer.
โ—‡ When all is tender, remove from the fire and use a stick blender (while they’re still hot) and blend them until smooth.
โ—‡ Season to taste with salt and
pepper, stir through cream (never
boil soup after adding cream, cream will split). โ—‡ Pour the soup into serving bowls and drizzle over it
a bit of cream, sprinkle with pepper and parsley. Best served with crusty bread or toast!
