Nothing screams autumn like a pumpkin soup 👆
I finally found a recipe that I actually like and it’s super easy 😊. Here it is👇
◇ 1.2 kg of fresh pumpkin cut into squares, or you can get frozen pumpkins.
◇ 1 medium sliced onion.
◇ 2 whole peeled garlic cloves.
◇ 3 cups of chicken broth.
◇ 1 cup of water.
◇ 1 tsp of salt.
◇ 1/2 tsp of pepper.
◇ 3/4 cup of cooking cream.
◇ Place all the ingredients (except the cooking cream) in a sauce pan and leave to boil on high heat, uncovered. After boiling, leave for 5 mins and then lower heat and leave for 10 mins to simmer.
◇ When all is tender, remove from the fire and use a stick blender (while they’re still hot) and blend them until smooth.
◇ Season to taste with salt and
pepper, stir through cream (never
boil soup after adding cream, cream will split). ◇ Pour the soup into serving bowls and drizzle over it
a bit of cream, sprinkle with pepper and parsley. Best served with crusty bread or toast!
