Nepalese Red Sauce

Let me tell you about this dressing I recently discovered from my Nepalese Babysitter!
It’s one of the easiest and tastiest dressings I’ve ever had and it goes with a variety of food πŸ€— (nachos, pasta, potatoes, chicken, steak… and the list goes on). Have you ever tried Nepalese food?

Ingredients:
β—‡ 1 fresh ginger head.
β—‡ 4 medium tomatoes.
β—‡ 1/2 cup of canole oil.
β—‡ 3 medium onions.
β—‡ 4 garlic cloves.
β—‡ 1 tsp of salt.

Method:
β—‡ After cutting all the ingredients, place them in a sauce pan and leave to boil on low heat for about 30 mins or until all is done (especially the tomatoes).
β—‡ Once they’re done, place them in a food processor until you get a creamy texture.

Moist Chocolate Homemade Cake

Cake , cake cake cake is all I can say about this picture πŸŽ‚

This is one of the tastiest cakes I’ve ever had. Give it a try πŸ˜…

Ingredients:
β—‡ 2 cups all-purpose flour
β—‡ 2 cups sugar
β—‡ 3/4 cup unsweetened cocoa powder
β—‡ 2 teaspoons baking powder
β—‡ 1 1/2 teaspoons baking soda
β—‡ 1 teaspoon salt
β—‡ 1/2 teaspoon nescafe
β—‡ 1 cup milk.
β—‡ 1/2 cup vegetable or canola oil
β—‡ 2 eggs
β—‡ 2 tsps vanilla extract

β—‡ 1 cup boiling water

Method:
β—‡ Preheat oven to 180Β°C Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring.
β—‡ Add flour, sugar, cocoa, baking
powder, baking soda, salt and
espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.
β—‡ Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cak batter. Beat on high speed for about minute to add air to the batter.
β—‡ Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center comes out clean.
β—‡ Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
β—‡ Frost cake with Chocolate Buttercream Frosting.

Notes:
The cake batter will be very thin after adding the boiling water. This is correct and results in the most delicious and moist chocolate cake.

As for the Chocolate ButterCream Frosting:

Ingredients:
β—‡ 1and a half cups of butter (3 sticks), room temperature.
β—‡ 1 cup of unsweetened cocoa.
β—‡ 5 cups confectioner’s sugar (powdered sugar).
β—‡ Half cup of milk.
β—‡ 2 teaspoons of vanilla extract.

Method:
β—‡ Add cocoa to a large bowl or bowl of stand a mixer. Whisk through to remove any lumps. Cream together butter and cocoa powder until well-combined.
β—‡ Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has
been combined, turn mixer onto a high speed for about a minute. Repeat until all sugar and milk have been added.
β—‡ Add vanilla extract and espresso powder and
combine well.

If the frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, 1 tablespoon at a time until it reaches the right consistency.

Chicken Fajita

I never imagined I would someday prepare chicken fajita😢, but it actually turned out to be easier than I thought. Although the chicken took a little bit of time to be cooked, I enjoyed preparing this dish and its dressings.

Do you prefer chicken or beef fajitas?

Ingredients (for 8 persons):
β—‡ 8 chicken breasts.
β—‡ 3 packs of fajita seasonings.
β—‡ 6 medium onions.
β—‡ 2 green bell peppers.
β—‡ 2 yellow bell peppers.
β—‡ 2 red bell peppers.
β—‡ 2 tsps of salt.

Method:
β—‡ After washing the chicken breasts (I use lemon juice and salt, then rinse them with drinking water), you place each chicken breast between 2 plastic foils and you pound it until it flattens.
β—‡ Once all the chicken breasts are flattened, place them on a skillet at high temperature for approx. 5 minutes each side and then remove when well cooked. Slice each piece into vertical long pieces and leave aside to cool down.
β—‡ After all the chicken is cut and ready, place the cut onions in a large sauce pan first (big pieces) until tender. Then add the cut bell peppers (check my stories highlight to see how they are cut) until tender. Then add the chicken pieces and spray over them the salt and spices one pack at a time all the while mixing gently all the ingredients together. Leave on high heat for about 5 minutes and then on low heat for 10 minutes.

NB: β—‡ You can always prepare this platter in advance and reheat it when its ready to be served.

Mexican Salad

Two nights ago, I had my best friends over for dinner and I prepared a mexican menu from A to Z. We even had frozen margueritas for drinks! πŸ˜ŠπŸ€·β€β™€οΈ
I didn’t have a specific salad recipe in mind so I came across a few recipes and decided to combine them and create one of my own πŸ‘‡

What’s your favorite salad?

Ingridients:
β—‡ 1 sliced iceburg lettuce.
β—‡ 1 drained can of red beans.
β—‡ Sliced cherry tomatoes.
β—‡ 3 sliced cucumbers.
β—‡ 1 sliced avocado.
β—‡ Half sliced red bell pepper.
β—‡ Half sliced yellow bell pepper.

Dressing:
β—‡ 1/4 cup of squeezed lime juice.
β—‡ 1/4 cup of olive oil.
β—‡ 1 minced garlic clove.
β—‡ 2 tbsps of minced cilantro.
β—‡ 2 tbsps of honey.
β—‡ 1 tsp of salt.

Method:
β—‡ Place all the ingredients in a bowl. In a sauce pan, mix all the dressing ingredients.
β—‡ Mix them together right before serving.

NB: It’s always better to serve them cold by placing them in the fridge beforehand.

Easy and Yummy Guacamole

Guacamole another side dish that I Love! And it’s pretty easy to prepare and you can eat with a variety of cuisines. I prefer it with nachos crisps and fajitas.

Ingredients:
β—‡ 3 medium avocados.
β—‡ 1 medium onion.
β—‡ 1 tsp of dry coriander.
β—‡ Sprinkle of salt.
β—‡ 2 tomatoes.
β—‡ 2 tbsps of squeezed lemon juice.

Method:
β—‡ Place all the ingredients (and only one tomato) in the food processor and leave it until creamy. Then, add the other sliced tomato to the mix and Bon AppΓ©tit πŸ€—

Lentil soup

2 days ago, we had the first gloomy day this autumn. So I immediately thought about preparing this lentil soup to get me ready for winter πŸ€— I love Winter ❄

What’s your favorite season?

Ingredients:
β—‡ 2 cups of split lentils.
β—‡ 1 cup of rice.
β—‡ 1/4 cup of olive oil.
β—‡ 1 onion.
β—‡ 1 tsp of salt.
β—‡ 1 and a half tsp of cumin.
β—‡ Sprinkle of white pepper.
β—‡ 1 and a half liters of water.

Method:
β—‡ Wash the lentils and rice and leave aside. Cut the onion and place it in a food processor until it becomes creamy.
β—‡ Fry the onion with the olive oil then add the lentils, rice and seasonings. Mix them well then add the water and stir. Leave to boil on high heat for 5 minutes then on low heat for 30 mins.
β—‡ Always check if it needs extra water. You can add seasonings to your liking.

Comfort Food – Pasta Salad

This season calls for cosy nights at home and yummy food! Two nights ago, I prepared a pasta salad from scratch and let me tell you it was very satisfying and really tasty!

What’s your favorite comfort food on a cosy night?

Ingredients:
β—‡ 1 iceburg lettuce.
β—‡ 2 cups of pasta.
β—‡ 1 can of corn.
β—‡ 1 can of red beans.
β—‡ 1 can of white tuna.
β—‡ 1 can of mushrooms.
β—‡ Olives.

Dressing:
β—‡ 3 tbsps of mayonnaise.
β—‡ 3 tbsps of olive oil.
β—‡ 1 tsp of salt.
β—‡ 1 squeezed lemon.
β—‡ Oregano.

Method:
β—‡ Mix all the ingredients in a big bowl. On the side, mix all the dressing ingredients and then pour it over the salad and mix well until everything is well combined.
β—‡ You can leave both preparations and mix them together right before serving.
