Kishk

Kishk (dried wheat fermented milk) is a popular dish here in Lebanon and it’s perfect for cold weather!
I recently discovered that Michael (the baby in my kitchen😊) loves it! So, I never miss a chance to prepare it especially that it’s so easy to make.

Ingredients:
β—‡ 250g of ground beef.
β—‡ 1 whole garlic head peeled and cut into half.
β—‡ 1 and a half cup of kishk.
β—‡ 6 cups of water (less or more).
β—‡ 1 tsp of salt.
β—‡ Sprinkle of pepper.
β—‡ Sprinkle of cinnamon.

Method:
β—‡ Place the ground beef in a sauce pan with the seasonings and leave it until well done. Then, add the cut garlic and mix for 1 minute. Then, add the cup of kishk and whisk them all together.
β—‡ Add the water to the mixture in the sauce pan, one cup at a time all the while mixing them. If you feel that the mixture is getting dry while cooking, you can always add some more water. Leave to boil on high heat for 5 mins and then on low heat for 30 mins. Don’t forget to stir from time to time.

NB:
This dish is better served hot with some toasted pita on the side.

Homemade Waffles

Waffle with powdered sugar

Today when I woke up I felt like preparing some waffles for breakfast! I found this easy recipe online but added my personal touch πŸ‘‡

Do you prefer waffles or pancakes?

Ingredients:
β—‡ 2 cups of all purpose flour.
β—‡ 1/2 tsp of salt.
β—‡ 3 tbsps of sugar.
β—‡ 4 tsps of baking powder.
β—‡ 2 eggs.
β—‡ 1 and a half cups warm milk.
β—‡ 1/3 cup of melted butter.
β—‡ 1 tsp vanilla.

Method:
β—‡ In a large bowl, mix together the flour, salt, baking powder and sugar. Then set aside and preheat the waffle iron to the desired
temperature.
β—‡ In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture and beat until blended.
β—‡ Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Yummy Homemade Hot Chocolate

When I was younger, I remember having the tastiest hot chocolate I’ve ever had at my aunt’s house. So last week, I recalled that taste and got the recipe from her.
And today, since it was raining outside, I decided to prepare it for a cosy night in β˜•

Do you remember where you had your favorite hot chocolate?

Ingredients:
β—‡ 6 tbsps of cocoa powder.
β—‡ 6 tbsps of sugar.
β—‡ 3/4 cup of water.
β—‡ Pinch of salt.
β—‡ 3 and 1/4 cups of milk.
β—‡ 1/4 tsp of vanilla powder.

Method:
β—‡ Mix the cocoa powder with the sugar until well combined. Then in a pot on low heat, add the water and the pinch of salt and mix well until the cocoa is well dissolved. Then, place it on high heat until the mixture boils. Turn the heat down again and leave to simmer for 3 minutes. Mix it from time to time.
β—‡ Add the milk in various batches all the while mixing on low heat. Keep it as long as the mixture is not boiling. When done, add the vanilla extract, mix well and serve.
β—‡ You can also place it in the fridge and drink as a cold chocolate drink πŸ€—

Another Colorful salad with Beans

Yellow is my favorite color! That’s why I always like to integrate it in one way or another in my salads! I think it adds some special vibe πŸ’›
What’s your favorite color?

Here I added up what I had in the fridge to create this colorful salad: Iceberg lettuce, yellow bell pepper, cucmbers, tomatoes, heart of palm and canned red beans.
And let me tell you roasting sesame seeds have been my thing lately. It gives such a yummy taste to the entire salad.

As for the dressing I made an oil and mustard sauce.

Ingredients:
β—‡ 2 squeezed lemons.
β—‡ 1/4 cup of olive oil.
β—‡ 1/4 cup of mustard.
β—‡ 1 tsp of salt.
β—‡ Oregano.

Tasty and easy Salmon fillet

πŸ‘† this was our lunch today! I used to think it is complicated to cook salmon fillet but let me tell you it only takes 15 minutes!
And the good thing about it is that you can have as many side dishes as you want with it. Here, I made some potato puree and sauteed fresh asparagus.

What’s the easiest thing you’ve ever cooked?

Ingredients:
β—‡ 1kg of cut salmon fillet.
β—‡ Salt.
β—‡ Pepper.

Method:
β—‡ In a pan, place the salmon fillets side by side and sprinkle over each slice salt (not a lot) and pepper (you can be generous).
β—‡ Preheat your oven at 180Β°C for about 10 minutes then place the pan in the oven at same temperature for 12 to 15 mins. Remove it and bon appetit 😊

As for the Asparagus

Ingredients:
β—‡ 1 pack of Asparagus.
β—‡ 2 tbsp of extra-virgin olive oil.
β—‡ Salt.
β—‡ Freshly ground black pepper.

Method:
β—‡ Heat a grill pan over high heat.
Toss the asparagus lightly in the olive oil and season generously with salt and pepper. β—‡ Grill while you turn them occasionally, until tender. They may need 5 minutes.
